It's excellent with porcini mushrooms and just about heavenly with salsiccia. Just thinking about it is making me hungry.

And I'll tell you: risotto in restaurants can never be as good as it is at home, because who'd wait 20 minutes for a primo? They have to prepare a batch part way, and then finish it when you order it. Not bad, but soooo much better at home.
